Spring Rolls with Peanut Sauce

Enjoy this refreshing, satisfying, veggie-packed dish with an easy homemade peanut sauce.

Ingredients (Spring Rolls)

  • 1/2 english cucumbers

  • 3-4 large carrots, peeled

  • 1 bunch cilantro

  • 1 bunch mint

  • protein options: shrimp, chickpeas, chicken

  • optional carbohydrate add-ins: rice, noodles

  • 1 rice paper package (15-17 papers per package)

Ingredients (Peanut Sauce)

  • 1/2 cup sweet chili sauce

  • 1/4 cup peanut butter

  • 2 tsp coconut aminos (like soy sauce)


Spring Roll Instructions

  1. Wash all produce.

  2. Julianne cut the cucumbers, shred the carrots, and mince the herbs. Set aside.

  3. Cut shrimp into 1/2 inch pieces or shred chicken if needed. Set aside.

  4. Prepare rice paper according to package instructions, one at a time.

  5. Once the first rice paper is prepped, assemble the spring roll in the following order: cucumbers, carrots, rice or noodles, herbs, protein). Repeat until desired amount of spring rolls have been assembled.


Peanut Sauce Instructions

  1. Using a blender, combine all ingredients until smooth.

  2. Enjoy by dipping spring rolls in peanut sauce.
