Beet-a-licious Valentine's Day Cookies (no-bake)












Enjoy your Valentine's or Galentine's Day with these delicious and nutritious festive cookies! They get their naturally pink color from beets and include other nutrient-dense ingredients like oats, dark chocolate, and almond butter.

Beets

Drain the liquid from the canned beets into a separate container and save in case you need the dough to be moister. Do not use pickled canned beets.

Oat Flour

Make your own oat flour by blending oats in a blender or food processor until it reaches a flour-like consistency (about 1 minute).

Almond Butter Alternative

If you choose, you may omit the almond butter by adding a little water if necessary for workable dough.

Combine all dry ingredients in a mixing bowl. Set aside.

Puree beets in a food processor with 2-4 Tbsp beet juice. (Use just enough juice to get a puree started, but no more.) Allow food processor to run 2-3 minutes to get a smooth puree, pulsing and scraping sides as needed.

In a small bowl, combine ½ cup ONLY of beet puree (you will have leftover beet puree--great in smoothies!), jam, vanilla extract, and almond butter.

Pour wet ingredients into dry ingredients and stir. Mix with a spoon, then knead until you get a slightly stiff Play-Doh consistency. Add more flour or a splash of beet juice if needed.

On a sheet of parchment paper, place dough. Use a rolling pin to roll each quarter just under ¼" thick. Punch out hearts with a cookie cutter. Place in the fridge for 15 minutes, or freezer for 5-10 minutes to slightly harden.

Meanwhile cookies are hardening, melt chocolate chips with a little coconut oil or vegetable oil (optional). Pull cookies from the fridge and gently spoon the melted chocolate on the tops of the cookies.

Enjoy! These cookies can be eaten right away, but are best if allowed to firm up in the fridge or freezer for another 10-15 minutes.

1-15 ounce can of beets (see Notes)

2 ¾ cup oat flour (Can grind your own - see Notes)

3 Tbsp sugar or other granulated sugar

¼ cup seedless raspberry jam (or desired fruit) or date paste

1 tsp vanilla extract

¼ cup almond butter (Optional - see Notes)

Dark chocolate chips - melted or as is (Optional)
