Slow Cooker Magic (with Recipe!)

Isn't it amazing how slow cookers have changed the game when it comes to meal prep? They make it so easy to whip up delicious dishes while you check off the rest of your to-do list. Just imagine tossing in some simple ingredients and letting the slow cooker work its magic, transforming them into a hearty, comforting meal that practically cooks itself!

One of my favorite creations is the Slow Cooker Lentil Veggie Soup. It's such a nourishing blend of lentils and colorful veggies, all simmering together to perfection. You can set it up right after work, do what you need to do for a couple hours and have a wholesome meal ready to eat or save for lunch the next day!

Storage

Leftovers keep well for 3–4 days in an airtight container in the fridge. Freeze in an airtight bag for 3-6 months.

Rinse, slice and sauté mushrooms in a skillet or by using your slow cooker's sauté setting. Add a bit of oil, salt and pepper until they release their moisture and begin to brown. Add diced onions immediately after.

Place the sautéed mushrooms and onions, diced carrots, diced celery, dried herbs and garlic into the slow cooker. If already using slow cooker sauté setting, change to slow cooker HIGH setting.

Pour in 4 cups of broth. Stir to combine.

Cover and cook on HIGH for 1½–2 hours, until the vegetables are tender.

About 20 minutes before the end of cooking, stir in the drained and rinsed canned lentils, the can of coconut milk and lemon juice. Continue cooking until everything is hot and flavors are blended.

Taste and adjust with salt and pepper before serving. Enjoy as is or with a slice of whole wheat or sourdough bread on the side!

8 oz mushrooms (canned or fresh)

2 TBSP olive oil

5 carrots (peeled)

6 celery ribs

1 tsp dried thyme

1 tsp rosemary

1 tsp Italian seasoning (or 1 TBSP if only using this seasoning)

3 garlic cloves

1 15 oz can lentils (or about 2 cups cooked)

4 cups low-sodium broth of choice

1 15 oz can full fat coconut milk

salt and pepper to taste

2 TBSP lemon juice

1 medium onion
