Storage

Leftovers keep well for 3–4 days in an airtight container in the fridge. Freeze in an airtight bag for 3-6 months.

Rinse, slice and sauté mushrooms in a skillet or by using your slow cooker's sauté setting. Add a bit of oil, salt and pepper until they release their moisture and begin to brown. Add diced onions immediately after.

Place the sautéed mushrooms and onions, diced carrots, diced celery, dried herbs and garlic into the slow cooker. If already using slow cooker sauté setting, change to slow cooker HIGH setting.

Pour in 4 cups of broth. Stir to combine.

Cover and cook on HIGH for 1½–2 hours, until the vegetables are tender.

About 20 minutes before the end of cooking, stir in the drained and rinsed canned lentils, the can of coconut milk and lemon juice. Continue cooking until everything is hot and flavors are blended.

4 cups low-sodium broth of choice

1 15 oz can full fat coconut milk

salt and pepper to taste

2 TBSP lemon juice

1 medium onion
